Windows XP and Windows Vista's encryption?

I'll be setting up an office open soon and you want to encrypt data on my disk into two or more PCs. What is the best tool to use to prevent theft of my work with my PC if a thief steals my shed or office?

I use version PGP Freeware (hard to find now.) To encrypt personal data and e-mails. It is virtually impossible to break encryption.
